Warm up with Boetje’s Appetizers

It’s February, so it’s time to check in on your resolutions. How are they going? If you resolved to eat healthy this year, here is an easy little appetizer that can help make that happen.

Tuna/Zucchini Rolls (Gluten Free*)

Ingredients:
2 can tuna (in olive oil)
Boetje’s Mustard
1/3 cup of cream cheese* (Full fat cream cheese is usually gluten free)
Walnuts to taste
2-3 Zucchini
Toothpicks or skewers

Instructions:
1. Mix tuna, softened cream cheese, 1 tablespoon Boetje’s, and walnuts together.
2. Wash & dry the zucchini and cut off the ends. Use a mandolin slicer to create long thin strips of zucchini.
3. Lay out individual slices of zucchini and top with tuna/mustard mixture.
4. Roll zucchini and secure with toothpick.

For extra flavor, add a Dipping Sauce!
Ingredients:
2 tbsp extra virgin olive oil
2 tbsp Boetje’s Mustard
2 tbsp full fat coconut milk

Combine all ingredients, mix well, and serve with the zucchini rolls.
